Fusilli Sweetly Spiced Carrot Pasta Salad


Ingredients

3 cups uncooked (750 mL)Catelli® Healthy Harvest® Multigrain Fusilli
1/2 cup (125 ml)finely chopped fresh mint leaves
2 tbsp (30 ml)cider vinegar
1 tbsp (15 ml)honey
2 tsp (10 ml)ground cumin
2 tsp (10 ml)roasted walnut oil or extra virgin olive oil
1/4 tsp (1 ml)each salt and pepper
1/2 cup (125 ml)1 % plain yogurt
1 1/4 cups (300 ml)shredded carrot
2/3 cup (150 ml)each finely chopped celery and green onion
1/2 cup (125 ml)raisins
1/4 cup (50 ml)chopped toasted walnuts

Preparation

Stir the yogurt with the mint, vinegar, honey, cumin, walnut oil, salt and pepper.

Toss the fusilli with the yogurt mixture, carrot, celery, green onion and raisins. Sprinkle with the walnuts.
