Colourful Minestrone Soup


3/4 cup (175 mL)CATELLI® RINGS
2 tsp (10 mL)vegetable oil
2slices bacon, chopped (optional)
1/2 cup (125 mL)each chopped onion, celery and carrot
2 tsp (10 mL)each dried thyme leaves and minced garlic
1/2each zucchini and yellow pepper, chopped
4 cups (1 L)sodium-reduced chicken or vegetable broth
28 oz (796 mL)canned diced tomatoes with juices
14 oz (398 mL)canned kidney beans, drained and rinsed


Heat the vegetable oil in a Dutch oven or large pot set over medium heat. Add the bacon (if desired), onion, celery, carrot, thyme and garlic; sauté for 6 minutes or until browned. Add the zucchini and yellow pepper; sauté for 2 to 3 minutes. Stir in the broth and tomatoes; bring to a boil.
Add the rings and beans; simmer, stirring occasionally, for 6 to 8 minutes. Adjust fluid with additional broth (if desired). Garnish with Parmesan cheese before serving
