|1/2 cup (125 mL)||each chopped onion, celery and carrot|
|2 tsp (10 mL)||each dried thyme leaves and minced garlic|
|1/2||each zucchini and yellow pepper, chopped|
|4 cups (1 L)||sodium-reduced chicken or vegetable broth|
|28 oz (796 mL)||canned diced tomatoes with juices|
|14 oz (398 mL)||canned kidney beans, drained and rinsed|
Heat the vegetable oil in a Dutch oven or large pot set over medium heat. Add the bacon (if desired), onion, celery, carrot, thyme and garlic; sauté for 6 minutes or until browned. Add the zucchini and yellow pepper; sauté for 2 to 3 minutes. Stir in the broth and tomatoes; bring to a boil.
Add the rings and beans; simmer, stirring occasionally, for 6 to 8 minutes. Adjust fluid with additional broth (if desired). Garnish with Parmesan cheese before serving
