Catelli Smart® Minestrone Ragout By Chef Andrew Springett


Ingredients

2 pkgs (750 g)CATELLI SMART® MACARONI
2 tbsp olive oil
2 tbspbacon, sliced thinly raw
½ cupyellow onion, diced small
To taste  sea salt/black pepper
¼ cupcelery, small dice
1 tbsp  garlic, sliced thinly
¼ cupleek, small dice
½ cupgreen cabbage, small dice
1 1/3 cupschicken stock
1 pcbay leaf
2 pcbasil stems
1 cuptomato and basil ready-made chunky pasta sauce
1 cupwhite beans canned (rinse under cold water and drain)
¼ cupgreen beans, angle cut sliced thinly
2 tbspfresh basil, sliced fine

Preparation

Heat a medium heavy bottom pot on a low flame for 30 seconds, add olive oil and heat for 10 seconds add bacon and cook for 30 seconds add onions, season lightly and cook for 2 minutes adding no color to the vegetables.

Add celery, garlic, leek and green cabbage, season to taste and cook for 5 minutes.

Add chicken stock, bay leaf and basil stems and bring to a simmer on medium heat and reduce amount of liquid by 1/4 to develop flavor.

Add pasta sauce and bring to a simmer, cook on a low heat for 10 minutes.

Add the rest of the ingredients, bring to a simmer and season to taste.

10 minutes before serving add the cooked Catelli® macaroni (add more or less according to desired heartiness), bring to a simmer.
