|2 tbsp||olive oil|
|2 tbsp||bacon, sliced thinly raw|
|½ cup||yellow onion, diced small|
|To taste||sea salt/black pepper|
|¼ cup||celery, small dice|
|1 tbsp||garlic, sliced thinly|
|¼ cup||leek, small dice|
|½ cup||green cabbage, small dice|
|1 1/3 cups||chicken stock|
|1 pc||bay leaf|
|2 pc||basil stems|
|1 cup||tomato and basil ready-made chunky pasta sauce|
|1 cup||white beans canned (rinse under cold water and drain)|
|¼ cup||green beans, angle cut sliced thinly|
|2 tbsp||fresh basil, sliced fine|
Heat a medium heavy bottom pot on a low flame for 30 seconds, add olive oil and heat for 10 seconds add bacon and cook for 30 seconds add onions, season lightly and cook for 2 minutes adding no color to the vegetables.
Add celery, garlic, leek and green cabbage, season to taste and cook for 5 minutes.
Add chicken stock, bay leaf and basil stems and bring to a simmer on medium heat and reduce amount of liquid by 1/4 to develop flavor.
Add pasta sauce and bring to a simmer, cook on a low heat for 10 minutes.
Add the rest of the ingredients, bring to a simmer and season to taste.
10 minutes before serving add the cooked Catelli® macaroni (add more or less according to desired heartiness), bring to a simmer.
